I was bored and was looking through my Pantry. On our last trip to BJ's (like Sam's club) I had grabbed a six-pack of cake mixes and hadn't done anything with them yet. Wonderful does not like frosting so making a normal cake doesn't fly in this house. I always have to get creative so I get a moist cake and he gets no frosting. This is my newest concoction and I must say, DELICIOUS (or in Rachel ray speak, Delish! & Yummo!)
Started with yellow cake mix

I added about two handfuls of Chocolate chips (I buy the large bags so don't always measure)

Make up a batch of Chocolate pudding and put in fridge to set till FIRM.

Now put cupcake papers in your pan

Fill just under halfway with cake batter

Drop a dollop of pudding in the center

Finish filling each cup to 2/3 with cake batter

Follow cake package directions for cooking temp and time. May need to add a minute or 2. Remove from oven when toothpick comes out clean when sticking just in top (don't hit the pudding layer) Cool on wire rack.

And Voila! You will not miss the frosting, I swear. Moist and tasty. And the filling doesn't ooze out so you can eat with your hands and not get messy.

I wanted to show that I used only about half the pudding, so be sure you have a willing participant to clean up after you. LOL

Only one thing to mention: Do not leave these out of the fridge for more than 2-3 days. Around day 4 is when I grabbed one and when I broke it open the pudding had a stringy look to it. I assumed it was the pudding going bad and had to throw the rest away. Please refrigerate your cupcakes. A short stint in the microwave makes them even yummier.Cupcake Surprise
